Javier’s Winning Drink – Pink Thriller

Cocktail Recipe


  • 1 1/2oz Empress 1908 Gin
  • 0.25oz Green Apple and Cumin infused (Del Maguey Vida) 
  • 0.75oz Ramazzotti Aperitivo Rosato
  • 0.50oz Lemon Juice
  • 0.25oz Belvoir Farm Elderflower Cordial
  • 4 Drops Of Fermented Beet Solution 
  • Cocktail Coupe
  • Garnish
    • Baked beet chip


  • Add all the ingredients of the cocktail to one of the shaker tins, then fill it with ice
  • Holding a shaker tin in each hand, slowly pour the drink into the empty tin
  • Slowly pour the drink back into the first tin. Repeat the process a few times to fully chill, dilute and mix all the ingredients in the drink
  • Strain the cocktail into a chilled cocktail coupe 
  • Garnish with a Baked Beet Chip
  • Green Apple And Cumin infused Del Maguey Vida (Sous vide a 750ml bottle of mezcal with a chopped green apple and a pinch of cumin for two hours at 145F. Filter through a coffee filter, bottled and put on the fridge)
  • Fermented Beet Solution (Fill up a mason jar with chopped beets, water and a teaspoon of salt. Let it ferment at room temperature for two days)
